I had thought maybe they had different personalities or something like that.  Some people might want you to have experience grooming race horses, or experience grooming show horses, or experience at horse shows.  Im just not sure what that all means or what the differences are.

e.g.:

STK1000 really close to "normal" productionbikes like you and me can buy in the bikeshop.
SSP600 tuned 600cc raceclass, ~145bhp
Moto2 all have the same engine with same bhp in 600cc, 4stroke engines, ~125bhp but different prototype frames
SBK tuned 1000cc 4stroke bikes, really powerfully racebikes ~220-240bhp
GP1000 4stroke MotoGP class, prototypes, ~250+ bhp
GP500 90's like todays MotoGP bikes , 500cc, 2stroke, beasts,~160bhp, light weight
GP250 90's like todays  Moto2 bikes, 250cc, 2stroke

1000cc bikes are heavier than 600cc and 250cc is lighter than 500cc but as u see they also got more/less power.

hope thats nearly correct and will help you. maybe you youtube the class names and get an overview.
