Edit: OH! I just thought of something that might be the cause of this problem........ I bet it's something to do with the "Helmet" you've selected? Have you installed the helmet correctly? It'll be something to do with the helmet selection I bet. ;)

Daytona, the track isn't flat down one of the straights so you drop off a bit in the track
