you could do some pretty nice drifting with the SBK bikeset (and the GP10).
...or you just overheat the rear tyre to reduce the grip to about the level of the bikes in the video.

in the rain, it's possible, so within the limits of the simulator :)

It's already possible, since a long time (probably since alpha versions of GPB). It's in the garage options.
However, final ratios as extreme as in the video have no sense on track, that's why we don't have them usually.
If I'm not wrong, Piboso is working on allowing us to change the primary ratio in the garage.
