If I may say.... I did notice that on the Cagiva GP500 vid, your not manually blipping your throttle when changing down gears on these classic GP500 bikes, seems you have "Shift Help" off(in settings/simulation). Try with it set to on and you'll hear the difference. ;)
These classic 500 bikes didn't have quick-shifters and therefore riders should really need to use their clutch and throttle to change gears(especially when changing down gears).
