I ride in reallife and move my head like many motogp riders -> straight to my body,
but the default rider POV-Cam is horizontal so i can't use it because i'm used to my view and i miss every apex and crash :D
Is there any possibility to modify the default rider cam?

Yes you can adjust how much the vision/head tilts when the bike is leaning, you should be able to find it in the settings titled "angle" more procentage the less will the vision stay horizontal
If you have MaxHud you can also change helmet movement including the rotation
