My son and me want to ride on online Server but it doesnt work for one. (we are sitting side by side)
Only one of us is able to connect to an online Server...the other gets the error "Connection timeout".
And it doesnt matter who of us connect to the Server, the last gets the error.
What can we do?

Silly question, but are you using two separate License keys?
If you are then it may have something to do with port forwarding on your router setting(I don't personally know what to do but have seen it in the past)
yes we are using two keys.
Port forwarding could be a solution i think but i dont know how to do this. I'm using the Telekom Speedport smart
I remember me and my mates used a program called log me in hamachi to create our own MC servers back into deee, instead of port forwarding etc. Don't know if that will help you here or not, but something to look into?

Without debugging and a log finding out more details as to why it's timed out, gotta agree with Matty, can't make any more suggestions except that hamachi programme
Please try editing the GP Bikes shortcut on one of the two PCs, to set a client port different from the default one ( 54310 ).
For example:
"C:\Program Files\GP Bikes\core.exe" -mod gpbikes/gpbikes -clientport 54311
